Corned beef hash in an omelet! That's something special and it’s just one of the reasons I love The Parkway Cafe. The food is wonderful, and the pork chili, although a bit thin, packs great flavor. Parking can be a little tricky, but if you don't mind a short walk, off-street parking by the trail works just fine. The diner experience here is fantastic with good food and service. Everyone is extremely nice, and the breakfast we had was tasty and fresh. I would eat here again without hesitation—it's the best food I've had on our trip to Denver/Boulder. We tried the chilaquiles and the special Quesobirria Tacos with eggs, along with a side of green chili and house potatoes. The food was unbelievably good. The portions are generous, the food perfectly seasoned and spicy, just like you'd hope from a local diner. Although I mostly visit The Parkway Cafe for brunch, this time I stopped by for a quick lunch. It's a hidden gem where most regulars are locals. It gets busy over the weekend, but you can always find parking along the road. The food is always fresh, tasty, and comes in decent portions, and the prices are reasonable. I've never had a bad experience there—just happy eating every time.
